A light roast has a short roast time, a lighter body, may feel clean, with mellow flavors. A medium roast feels like tangy acidity, tastes balanced with smooth and rich flavors, with noted aromas. A dark roast however, is fuller-bodied, robust, and with bold flavors with minimal aromas, unlike light and medium roasts. Keep in mind that taste is subjective. Freshness

If not in its original bag, store coffee in an airtight container at room temperature. After it has been grounded and opened, it should be used within a week for ultimate flavor. Coffee should be protected from oxygen, heat, light, and moisture.Coffee should never be refrigerated, or frozen, as our experience tells us that doing so compromises freshness and flavor. Also, you should never reheat coffee, and you should not leave brewed coffee for more than 15-20 minutes on a burner as it loses flavor and becomes more bitter.
